Description

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • ½ tsp chili flakes (optional for spice)
  • 2 tbsp lime juice

Instructions

  1. In a bowl, combine brown sugar, soy sauce, minced garlic, grated ginger, lime juice, olive oil, chili flakes if using, salt, and pepper. Mix well until the sugar dissolves.
  2. Add the chicken breasts or thighs and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.

  4. Grilling: Preheat the grill to medium-high heat. Place the chicken breasts or thighs on the grill and cook for 6-8 minutes per side, basting occasionally with the reserved marinade for a rich glaze. Add pineapple slices to the grill alongside the chicken for a smoky caramelized flavor.
  5. Baking: Preheat the oven to 375°F (190°C). Place the marinated chicken in a baking dish, pour the marinade and pineapple chunks over the top, and bake uncovered for 30 minutes, or until the chicken is fully cooked and juicy.
  6. Slow Cooking: Place the chicken and pineapple chunks into the slow cooker. Pour the marinade over everything and cook on low for 4 to 5 hours until the chicken is tender and infused with the sweet and tangy sauce.
