- Add the chicken breasts or thighs and coat evenly with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
- Choose one of the following cooking methods:
- Grilling: Preheat the grill to medium-high heat. Place the chicken breasts or thighs on the grill and cook for 6-8 minutes per side, basting occasionally with the reserved marinade for a rich glaze. Add pineapple slices to the grill alongside the chicken for a smoky caramelized flavor.
- Baking: Preheat the oven to 375°F (190°C). Place the marinated chicken in a baking dish, pour the marinade and pineapple chunks over the top, and bake uncovered for 30 minutes, or until the chicken is fully cooked and juicy.
- Slow Cooking: Place the chicken and pineapple chunks into the slow cooker. Pour the marinade over everything and cook on low for 4 to 5 hours until the chicken is tender and infused with the sweet and tangy sauce.
