Description

Delicious peanut butter chocolate cookies that are easy to make and perfect for any occasion.


Ingredients

Scale
  • 1 cup all-purpose flour (gluten free, if needed)
  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons oil (canola, vegetable, etc.)
  • 1/4 cup butter (vegan or standard, softened)
  • 3/4 cup white sugar
  • 34 tablespoons water (* see notes)
  • 1/2 cup peanut butter chips (vegan or standard)
  • 1/4 cup chocolate (chopped)

Instructions

  1. In a large mixing bowl, add all your dry ingredients and mix well.
  2. In a separate bowl, whisk together your oil, softened butter, and sugar, until combined.
  3. Add one tablespoon of water and whisk again, until glossy and smooth.
  4. Slowly add the dry ingredients and mix until just combined.
  5. Fold through the peanut butter chips and chopped chocolate.
  6. Cover the mixing bowl and place it in the refrigerator for 30 minutes.
  7. Preheat the oven to 180C/350F.
  8. Line a large baking sheet with parchment paper.
  9. Remove the cookie dough from the refrigerator.
  10. Form 6 large or 12 small balls of cookie dough and place on the lined sheet.
  11. Bake the cookies for 12-15 minutes, or until the tops are just done.
  12. Remove from the oven and let cool on the pan completely.
