Description
Delicious flaky Moroccan pancakes best served warm with honey, butter, or jam.

- 2 cups All-Purpose Flour
- 1 cup Fine Semolina
- 1 teaspoon Salt
- 1 tablespoon Sugar
- 1 cup Warm Water
- 4 tablespoons Melted Butter
- 2 tablespoons Vegetable Oil
- 1 cup Extra Fine Semolina
Instructions
- In a mixing bowl, combine the all-purpose flour, fine semolina, salt, and sugar.
- Gradually add warm water, mixing until a soft dough forms that’s slightly tacky but holds together well.
- Knead the dough for about 10 minutes until it becomes elastic and smooth.
- Cover the dough with a clean cloth and let it rest for 30 minutes.
- Divide the rested dough into golf ball-sized pieces. Lightly oil each ball with vegetable oil.
- On an oiled surface, flatten each ball into a thin circle. Brush each circle with the melted butter and oil mixture, sprinkling extra fine semolina on top.
- Fold the edges of the circle toward the center to create a strip, then coil it into a spiral shape.
- Gently flatten each spiral into a round pancake about 1/4 inch thick.
- Heat a skillet over medium heat. Cook each pancake for about 2-3 minutes per side until golden brown.
- Serve your delicious Meloui warm with honey, butter, or jam.
Notes
- Whole wheat flour can be used for a nuttier flavor.
- Extra all-purpose flour can substitute for fine semolina if needed.
- Oil is a suitable dairy-free alternative for melted butter.
- Any neutral oil will work for vegetable oil.
- Adjust warm water for consistency as desired.
