Soft and colorful cookies filled with rainbow sprinkles, perfect for any celebration!
Ingredients

- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 tablespoon vanilla extract
- 3/4 cup buttermilk
- 1/3 cup rainbow sprinkles
- 1/2 cup unsalted butter, softened (for filling)
- 1 1/2 cups powdered sugar, sifted
- 1 teaspoon vanilla extract (for filling)
- 2 to 3 tablespoons heavy cream or milk
- Pinch of salt (for filling)
- Additional rainbow sprinkles for decoration
Instructions
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a separate bowl, beat butter and sugar with a mixer until fluffy, about 2–3 minutes.
- Add the egg and vanilla extract; beat until fully combined.
- On low speed, alternately add dry ingredients and buttermilk, beginning and ending with the dry mix.
- Gently fold in rainbow sprinkles with a spatula.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop batter onto sheets using a cookie scoop, spacing about 2 inches apart.
- Bake for 10–12 minutes until the tops spring back when touched.
- Cool completely on a wire rack.
- For the filling, beat butter until creamy. Add powdered sugar gradually, then vanilla and salt. Add cream 1 tbsp at a time to reach desired texture.
- Pipe or spread filling on the flat side of one cookie, then top with another cookie.
- Roll edges in sprinkles for a festive finish.
Notes
- Make sure the butter is softened for easy mixing.
- You can add more or less sprinkles based on preference.
