A delicious and easy vegetable stir-fry with rice noodles, perfect for a quick meal!
Ingredients

- 200 g rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 cup carrots, shredded
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 pinch white pepper
- 2 stalks green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Soak rice noodles in warm water according to package directions until tender then drain.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add garlic and ginger and stir-fry for about 30 seconds until fragrant.
- Add carrots, bell peppers, and broccoli and stir-fry for 3 to 4 minutes until crisp-tender.
- Add drained noodles, soy sauce, oyster sauce, sesame oil, and white pepper, tossing to combine and heat through.
- Remove from heat, stir in green onions and sprinkle with sesame seeds before serving.
Notes
- Adjust vegetable quantities based on preference.
- For a spicier dish, add red pepper flakes.
