Description

A delicious strawberry galette made with fresh strawberries and a flaky crust.


Ingredients

  • 1 sheet pie dough (or galette dough)
  • 2 cups fresh strawberries, sliced
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • 1 egg, beaten
  • 1 tbsp sugar (for topping)
  • 1 tbsp butter, diced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, toss the sliced strawberries with sugar, cornstarch, lemon juice, and vanilla until evenly coated and glossy.
  3. Roll the dough onto a parchment-lined baking sheet, then pile the strawberry mixture into the center, leaving about a 2-inch border around the edges.
  4. Dot the filling with small pieces of butter.
  5. Gently fold the edges of the dough over the filling, pleating as you go. It doesn’t need to be perfect.
  6. Brush the crust with egg wash and sprinkle with sugar for extra crunch and color.
  7. Bake the galette for 38–40 minutes, until the crust is deeply golden and the filling is bubbling.
  8. Let it cool for 10–15 minutes before slicing. This helps the juices set, so the slices hold together better.
