Description
A delicious strawberry galette made with fresh strawberries and a flaky crust.
Ingredients

- 1 sheet pie dough (or galette dough)
- 2 cups fresh strawberries, sliced
- ¼ cup sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- ½ tsp vanilla extract
- 1 egg, beaten
- 1 tbsp sugar (for topping)
- 1 tbsp butter, diced
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, toss the sliced strawberries with sugar, cornstarch, lemon juice, and vanilla until evenly coated and glossy.
- Roll the dough onto a parchment-lined baking sheet, then pile the strawberry mixture into the center, leaving about a 2-inch border around the edges.
- Dot the filling with small pieces of butter.
- Gently fold the edges of the dough over the filling, pleating as you go. It doesn’t need to be perfect.
- Brush the crust with egg wash and sprinkle with sugar for extra crunch and color.
- Bake the galette for 38–40 minutes, until the crust is deeply golden and the filling is bubbling.
- Let it cool for 10–15 minutes before slicing. This helps the juices set, so the slices hold together better.
Notes
- Feel free to substitute other berries if desired.
- Serve warm or at room temperature.
