A delicious and creamy avocado chicken salad perfect for a quick meal.
Ingredients

- 2 cups cooked, shredded chicken (rotisserie works great!)
- 1 ripe avocado, mashed
- 1 tablespoon lime juice
- 1/4 cup diced red onion
- 1/2 cup diced tomatoes
- 1/4 cup plain Greek yogurt
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Shred the leftover or rotisserie chicken into bite-sized pieces and place it in a large bowl.
- In a separate bowl, mash the ripe avocado until smooth. Stir in the lime juice.
- Mix the mashed avocado with the shredded chicken until well blended. Add in the diced red onion and tomatoes.
- Fold in the Greek yogurt to make it creamy, or use more mashed avocado.
- Sprinkle salt and pepper to taste and mix thoroughly.
- Garnish with fresh cilantro if desired and serve immediately or refrigerate until ready to enjoy.
Notes
- This salad can be served as a filling for sandwiches or in lettuce wraps.
- Best served fresh, but can be stored in an airtight container in the refrigerator for up to 2 days.
