Description
Delicious and cheesy refried bean burritos served with salsa, sour cream, guacamole, and fresh lime.

- 32 oz. refried beans (2 cans)
- ½ cup salsa
- 1 tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- pinch of salt and pepper
- 1½ cups shredded quesadilla cheese
- 8 10-inch tortillas
- 1 tbsp olive oil
- to taste salsa
- to taste sour cream
- to taste guacamole
- to taste chopped cilantro
- to taste lime wedges
Instructions
- Add the beans to a saucepan over medium heat, stirring until smooth. Then, stir in the salsa, chili powder, garlic powder, onion powder, salt, and pepper. Cook for 3-4 minutes until heated through.
- Place the tortillas between damp paper towels and microwave for 30 seconds to make them soft and pliable. Add about ⅓ cup of cheese to the center of each tortilla. Then, top with ½ cup of beans.
- Bring the bottom half of the tortilla up over the beans and tuck the bottom edge under the pile. Fold each side of the tortilla into the middle and tightly roll up into a burrito.
- Heat 1 tablespoon of oil in a skillet over medium heat. Place 1-3 burritos at a time in the skillet, cooking for a couple of minutes on each side until golden brown.
- Serve with your desired fixings such as salsa, sour cream, guacamole, cilantro, and lime wedges.
