Description

This delightful cherry-infused cake is perfect for any occasion, topped with a fluffy whipped frosting.


Ingredients

  • 1 white cake mix
  • 4 large eggs, room temperature
  • 1/2 cup vegetable or canola oil
  • 1 cup buttermilk
  • 1 tsp. almond extract
  • 1 3 oz box cherry gelatin (any flavor will work)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 8 oz. tub whipped topping, thawed
  • 1/2 cup marshmallow fluff
  • 1/41/2 cup powdered sugar
  • 1 tsp. almond extract
  • Additional whipped topping for serving
  • Fresh Cherries for garnish
  • Cherry Pie Filling for serving
  • Sliced Almonds for garnish

Instructions

  1. Preheat oven to 350 degrees and coat a 13×9 baking dish with non-stick cooking spray.
  2. Combine cake mix, eggs, boiling water, buttermilk, oil, and almond extract in a mixing bowl until smooth.
  3. Spread the mixture evenly into the baking dish and bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
  4. Remove from oven and let cool for 15 minutes.
  5. Combine gelatin and boiling water in a separate bowl and stir for about 2 minutes until dissolved, then add cold water.
  6. Using a wooden skewer or large fork, poke holes into the cake about every 1/2 inch.
  7. Carefully pour the gelatin mixture over the cake.
  8. Place the cake in the refrigerator for at least 3 hours or overnight.
  9. In a mixing bowl, combine the whipped topping, marshmallow fluff, and powdered sugar, starting with 1/4 cup and mix until fluffy, adding more sugar as needed to reach desired thickness.
  10. Spread frosting over the cooled cake.
  11. Store any leftovers in the refrigerator covered with plastic wrap.
  12. Serve with fresh cherries, canned cherries, or sliced almonds.

Notes

  • Chilling the cake overnight allows the flavors to meld beautifully.
  • The frosting can be adjusted for sweetness by varying the amount of powdered sugar.
  • Add more cherries on top for an extra fruity flavor and presentation.
