Delicious homemade pumpkin gnocchi tossed in a fresh sage pesto.
Ingredients

- 1 cup pumpkin puree (canned or homemade)
- 1 cup all-purpose flour (plus extra for dusting)
- 1 large egg yolk
- 1 cup fresh sage leaves
- ½ cup extra virgin olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prepare the Dough: In a bowl, mix pumpkin puree, egg yolk, salt, and flour until a dough forms. Adjust flour as needed for texture.
- Shape the Gnocchi: Turn dough onto a floured surface; roll into ropes and cut into one-inch pieces. Use a fork to create ridges.
- Cook the Gnocchi: Boil salted water in a pot; add gnocchi. Once they float, cook for an additional minute before removing with a slotted spoon.
- Make the Sage Pesto: Blend fresh sage leaves, Parmesan cheese, olive oil, salt, and pepper until smooth.
- Combine and Serve: Toss cooked gnocchi in sage pesto and drizzle with olive oil if desired. Serve warm.
Notes
- This dish is best served immediately after preparation for the freshest flavor.
- You can add more Parmesan cheese on top when serving if desired.
