A deliciously cheesy ground beef bake that is hearty and perfect for any family dinner.

- 1 lb lean ground beef
- 1 medium onion, chopped
- 1 cup bell peppers, diced (any color)
- 1 can (14 oz) diced tomatoes
- 2 cups frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
Instructions
- Preheat your oven to 350°F (175°C). Grease a large baking dish.
- In a skillet over medium heat, sauté chopped onions for 3-5 minutes until translucent. Add diced bell peppers and cook for another minute.
- Add lean ground beef to the skillet and cook until browned (5-7 minutes). Drain any excess fat.
- Stir in canned tomatoes, salt, pepper, garlic powder, and Italian seasoning. Simmer for 3 minutes.
- Mix in frozen mixed vegetables and heat through for another 3-4 minutes.
- Layer half of the meat mixture in the greased baking dish, sprinkle with half the cheese, then add the remaining meat mixture followed by the rest of the cheese.
- Bake for 25-30 minutes or until bubbly and golden brown.
Notes
- This dish can be served with a side salad for a complete meal.
