- 1 lb Italian sausage (spicy or mild)
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups low-sodium vegetable broth
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 cups fresh spinach or kale
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until softened.
- Push vegetables to one side and add the sausage. Cook until browned, breaking it apart with a spoon.
- Stir in garlic, thyme, and rosemary; cook until fragrant.
- Pour in vegetable broth and add the white beans. Bring to a gentle simmer.
- Add spinach or kale during the last few minutes of cooking until wilted. Season with salt and pepper before serving.
Notes
- For a spicier soup, use spicy Italian sausage.
- Can substitute spinach with kale if desired.
