Ingredients

  • 1 lb Italian sausage (spicy or mild)
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Push vegetables to one side and add the sausage. Cook until browned, breaking it apart with a spoon.
  3. Stir in garlic, thyme, and rosemary; cook until fragrant.
  4. Pour in vegetable broth and add the white beans. Bring to a gentle simmer.
  5. Add spinach or kale during the last few minutes of cooking until wilted. Season with salt and pepper before serving.

Notes

  • For a spicier soup, use spicy Italian sausage.
  • Can substitute spinach with kale if desired.
