- 1 cup (220 g) homemade mayonnaise
- 1 chipotle pepper in adobo, roughly chopped
- 2 teaspoons adobo sauce, from the can of chipotle peppers in adobo
- 1 teaspoon fresh lime juice
- 1 teaspoon garlic, minced
- ¼ teaspoon kosher salt
- 1 teaspoon honey
- ½ teaspoon paprika
Instructions
- Add the homemade mayonnaise, chopped chipotle pepper, adobo sauce, lime juice, garlic, salt, honey, and paprika to a wide-mouth jar or blender pitcher.
- Insert an immersion blender and blend for 10 to 20 seconds, until smooth, creamy, and a vibrant orange color.
- Blend on low speed, pulsing as needed, until completely smooth. Scrape down the sides once or twice to make sure everything is fully combined.
- Taste and adjust as needed. Add more chipotle or adobo sauce for extra heat, more lime juice for brightness, or a touch more honey for sweetness.
- Serve immediately or refrigerate for at least 30 minutes to let the flavors develop.
