Description

A creamy and spicy chipotle mayonnaise that is perfect for sandwiches, dips, and spreads.


Ingredients

Scale
  • 1 cup (220 g) homemade mayonnaise
  • 1 chipotle pepper in adobo, roughly chopped
  • 2 teaspoons adobo sauce, from the can of chipotle peppers in adobo
  • 1 teaspoon fresh lime juice
  • 1 teaspoon garlic, minced
  • ¼ teaspoon kosher salt
  • 1 teaspoon honey
  • ½ teaspoon paprika

Instructions

  1. Add the homemade mayonnaise, chopped chipotle pepper, adobo sauce, lime juice, garlic, salt, honey, and paprika to a wide-mouth jar or blender pitcher.
  2. Insert an immersion blender and blend for 10 to 20 seconds, until smooth, creamy, and a vibrant orange color.
  3. Blend on low speed, pulsing as needed, until completely smooth. Scrape down the sides once or twice to make sure everything is fully combined.
  4. Taste and adjust as needed. Add more chipotle or adobo sauce for extra heat, more lime juice for brightness, or a touch more honey for sweetness.
  5. Serve immediately or refrigerate for at least 30 minutes to let the flavors develop.
