Description
This roasted cabbage recipe is easy to make and pairs perfectly with a creamy garlic aioli.

- 1 medium green cabbage (about 2 lbs)
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 cloves garlic, minced
- 1 cup mayonnaise
- 1 tbsp freshly squeezed lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the cabbage into eight wedges and place them on the prepared baking sheet.
- Drizzle olive oil over the wedges and season with salt and pepper; rub the seasoning into the cabbage.
- Roast in the preheated oven for 25-30 minutes until golden brown and crispy on the edges.
- While roasting, prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl; whisk until smooth.
- Serve roasted cabbage wedges drizzled with garlic aioli.
Notes
- For a spicier version, add red pepper flakes to the cabbage before roasting.
- You can adjust the amount of garlic in the aioli to taste.
