Description

This roasted cabbage recipe is easy to make and pairs perfectly with a creamy garlic aioli.


Ingredients

  • 1 medium green cabbage (about 2 lbs)
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cloves garlic, minced
  • 1 cup mayonnaise
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the cabbage into eight wedges and place them on the prepared baking sheet.
  3. Drizzle olive oil over the wedges and season with salt and pepper; rub the seasoning into the cabbage.
  4. Roast in the preheated oven for 25-30 minutes until golden brown and crispy on the edges.
  5. While roasting, prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl; whisk until smooth.
  6. Serve roasted cabbage wedges drizzled with garlic aioli.

Notes

  • For a spicier version, add red pepper flakes to the cabbage before roasting.
  • You can adjust the amount of garlic in the aioli to taste.
