Spicy Garlic Carrots

Description

A delicious side dish featuring julienned carrots seasoned with garlic and spices.


Ingredients

Scale
  • 2 lbs carrots (about 6, peeled and washed)
  • 3 Tbsp white distilled vinegar (5% acidity)
  • 9 cloves garlic (5 cloves if large)
  • 1 1/2 Tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1 tsp ground coriander
  • 3/4 tsp black pepper
  • 1/4 cup sunflower oil

Instructions

  1. Julienne carrots using a Korean carrot grater or Mandoline.
  2. Add all the ingredients except for the sunflower oil. Set aside.
  3. Heat oil over high in a small saucepan until hot, carefully pour over carrots, and toss everything well.
  4. Keep refrigerated for up to 2 weeks.
