This easy lasagna recipe uses simple ingredients and steps to create a delicious meal without ricotta.

- 12 lasagna noodles (regular or no boil noodles for easy lasagna recipe without ricotta no boil)
- 1 lb ground beef (for easy lasagna recipe ground beef without ricotta)
- 2 cups marinara or pasta sauce
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Boil lasagna noodles according to package instructions until tender. Drain and set aside. (Skip this step if using no boil noodles.)
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft. Stir in garlic and cook for about 30 seconds.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Pour in the marinara sauce. Add Italian seasoning, salt, and pepper. Let it simmer for about 10 minutes so the flavors blend well.
- Spread a thin layer of meat sauce in a baking dish. Add a layer of noodles, then meat sauce, then mozzarella and Parmesan cheese.
- Repeat layers until ingredients are used. Finish with a generous cheese layer on top.
- Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake another 15 to 20 minutes until the cheese is golden and bubbly.
- Let the lasagna sit for about 10 minutes before slicing. This helps it hold its shape when serving.
Notes
- Ground turkey can replace ground beef.
- Cottage cheese can be used if you prefer an easy lasagna recipe without ricotta or cottage cheese alternative by simply adding extra mozzarella instead.
- Store bought pasta sauce works well for a quick meal.
