Description

Delicious and creamy mashed cauliflower, perfect as a low-carb side dish.


Ingredients

Scale
  • 1 large or 2 small cauliflower crowns
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Drizzle of olive oil

Instructions

  1. Place a steamer basket at the bottom of the Instant Pot.
  2. Add one cup of water.
  3. Remove the core from the cauliflower and chop it into florets.
  4. Close the lid and set the valve to the Sealing position.
  5. Cook on high pressure for 3 minutes.
  6. Do a quick release to release the pressure after the Instant Pot beeps.
  7. Transfer the cauliflower to a food processor or a large bowl, and use a potato masher to mash it.
  8. Season with salt, pepper, and a drizzle of olive oil.
  9. Feel free to include any desired toppings or add-ins mentioned in the post.
  10. Serve immediately with an extra drizzle of olive oil and freshly cracked pepper.
  11. You can easily reheat the mashed cauliflower in the microwave.
