These healthy carrot oat bites are a perfect snack or treat!
Ingredients

- 1 cup grated carrots
- 1 cup oats
- 1/2 cup almond flour (Can substitute with oat flour or whole wheat flour.)
- 1/4 cup maple syrup
- 1/4 cup shredded coconut
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup chopped walnuts or pecans
- 1 teaspoon vanilla extract
Instructions
- Gather all the ingredients on your kitchen counter.
- In a large mixing bowl, combine the grated carrots, oats, almond flour, shredded coconut, cinnamon, nutmeg, and chopped nuts. Stir until mixed evenly.
- Pour in the maple syrup and vanilla extract. Mix efficiently to coat all dry ingredients.
- Roll the mixture into small balls around 1-inch in diameter.
- Place the formed bites onto a tray lined with parchment paper and refrigerate for at least 30 minutes.
Notes
- These bites can be stored in the refrigerator for up to a week.
- Feel free to substitute nuts based on your preference.
