Description

These healthy carrot oat bites are a perfect snack or treat!


Ingredients

Scale
  • 1 cup grated carrots
  • 1 cup oats
  • 1/2 cup almond flour (Can substitute with oat flour or whole wheat flour.)
  • 1/4 cup maple syrup
  • 1/4 cup shredded coconut
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped walnuts or pecans
  • 1 teaspoon vanilla extract

Instructions

  1. Gather all the ingredients on your kitchen counter.
  2. In a large mixing bowl, combine the grated carrots, oats, almond flour, shredded coconut, cinnamon, nutmeg, and chopped nuts. Stir until mixed evenly.
  3. Pour in the maple syrup and vanilla extract. Mix efficiently to coat all dry ingredients.
  4. Roll the mixture into small balls around 1-inch in diameter.
  5. Place the formed bites onto a tray lined with parchment paper and refrigerate for at least 30 minutes.
