Delicious oatmeal raisin cookie bars that are easy to make and perfect for any occasion!
Ingredients

- 1 cup unsalted butter, melted
- 1 1/2 cups dark brown sugar, packed
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 3/4 cup all-purpose flour
- 2 teaspoons cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 Tablespoon cornstarch
- 3 cups old fashioned oats
- 2 cups raisins
- 2 teaspoons powdered sugar, optional topping
Instructions
- Preheat oven to 350 degrees F. Line a 13×9 baking dish with parchment paper and set it aside.
- In a mixing bowl, beat melted butter with dark brown sugar for 2 minutes. Add in eggs and vanilla extract and beat an additional minute, scraping down the sides of the bowl as needed.
- To the bowl, add flour, cinnamon, nutmeg, baking soda, kosher salt, and cornstarch. Mix on low just until combined.
- Add in the oats and raisins. Mix until blended. Pour batter into the prepared baking dish.
- Bake in a preheated oven for 25-28 minutes, until the edges are lightly browned. Remove from the oven and cool completely before cutting into bars.
- If desired, sprinkle cooled cookie bars with a light dusting of powdered sugar.
Notes
- Make sure to let the bars cool completely for easier slicing.
- These bars can be stored in an airtight container for up to a week.
