Description

Delicious oatmeal raisin cookie bars that are easy to make and perfect for any occasion!


Ingredients

  • 1 cup unsalted butter, melted
  • 1 1/2 cups dark brown sugar, packed
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 3/4 cup all-purpose flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 Tablespoon cornstarch
  • 3 cups old fashioned oats
  • 2 cups raisins
  • 2 teaspoons powdered sugar, optional topping

Instructions

  1. Preheat oven to 350 degrees F. Line a 13×9 baking dish with parchment paper and set it aside.
  2. In a mixing bowl, beat melted butter with dark brown sugar for 2 minutes. Add in eggs and vanilla extract and beat an additional minute, scraping down the sides of the bowl as needed.
  3. To the bowl, add flour, cinnamon, nutmeg, baking soda, kosher salt, and cornstarch. Mix on low just until combined.
  4. Add in the oats and raisins. Mix until blended. Pour batter into the prepared baking dish.
  5. Bake in a preheated oven for 25-28 minutes, until the edges are lightly browned. Remove from the oven and cool completely before cutting into bars.
  6. If desired, sprinkle cooled cookie bars with a light dusting of powdered sugar.

Notes

  • Make sure to let the bars cool completely for easier slicing.
