Description

Delicious and nutritious banana chocolate chip muffins made with oat flour and protein powder.


Ingredients

  • 1 cup mashed banana
  • 2 large eggs
  • ¼ cup honey
  • 1 tablespoon oil
  • 1 teaspoon vanilla extract
  • 1 ¼ cup oat flour
  • ½ cup vanilla protein powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the mashed banana, eggs, honey, oil, and vanilla extract in a large bowl until well combined.
  3. Combine the dry ingredients by whisking the oat flour, vanilla protein powder, ground cinnamon, baking powder, baking soda, and sea salt in a separate bowl.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the chocolate chips if you choose to include them.
  6. Spoon the batter into a muffin tin lined with cupcake liners or greased lightly.
  7. Bake for 15-18 minutes, or until the muffins are lightly golden on top and a toothpick inserted into the center comes out clean.
  8. Cool the muffins in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Optional: Serve warm with a drizzle of honey for extra sweetness.
