Description

This hearty slow cooker beef stew is perfect for a comforting meal.


Ingredients

  • 900 g beef chuck, cut into -inch cubes
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 225 g mushrooms, sliced
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 cup sour cream
  • Fresh parsley, for garnish

Instructions

  1. Season beef with salt and pepper. Heat olive oil in a skillet and brown beef.
  2. Transfer beef to the slow cooker.
  3. Add onion, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon, and paprika.
  4. Cover and cook on LOW 7–8 hours or HIGH 4–5 hours, until tender.
  5. Mix cornstarch with water; stir into stew. Cook 15 minutes until thickened.
  6. Stir in sour cream just before serving.
  7. Garnish with parsley and serve hot.

Notes

  • For a thicker stew, ensure that the cornstarch is mixed well with water before adding it.
  • Feel free to add your favorite vegetables to the stew for extra nutrients.
