Description

Delicious loaded baked potatoes topped with seasoned beef, black beans, cheese, and fresh toppings.


Ingredients

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 medium green onions, chopped
  • ¼ cup sour cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prick each potato with a fork, rub with olive oil, and season with salt and pepper.
  3. Place the potatoes on a baking sheet and bake for 45 to 55 minutes until tender.
  4. While the potatoes bake, brown the ground beef in a skillet over medium heat, drain excess fat, and stir in the taco seasoning with a splash of water; simmer for 3 minutes.
  5. Warm the black beans in a small saucepan or microwave.
  6. Remove the potatoes from the oven, slice each lengthwise, and gently fluff the insides with a fork.
  7. Top each potato with seasoned beef, black beans, shredded cheese, salsa, chopped green onions, and a dollop of sour cream.

Notes

  • Feel free to add additional toppings such as avocado or jalapeños.
